In the heart of the meatpacking district, The Aviary is Chicago�s newest cocktail bar, yet it doesn�t even have a standing bar. Open Wednesday through Sunday evenings 6 pm until 2 am, The Aviary offers 70 seats in the bar with room for 16 to 18 to stand around bar-height tables. All spots are taken quickly, with parties making reservations hours in advance. Guests should email their reservations to the bar with their desired time and size, are randomly selected everyday and notified hours before their projected arrival time. The speakeasy-type club offers unconventional cocktails that are advertised daily on the bar�s Facebook page. Grant Achatz and Chaig Schoettler, along with their team, create drinks such as the �Popcorn,� consisting of butter, cr�me fraiche and rum. With swanky silver decorations and mixologist-created cocktails, the menu is never boring or conservative. Drinks range from $12 to $28, with small bite-sized appetizers to accompany the cocktails.
